The tv show Human Weapon had a good episode on Krav Maga.  Near the start of the show a guy with a rubber knife attacks the big MMA guy: the latter would have been filleted.  By the end of the show/training he at least stood a chance (and we are not talking about the use of trained, knife fighting techniques).

The best knife fighting movie I ever saw was called "Exposure".  A photographer in Rio gets trained in "La Grande Arte" by a master to take revenge.  Great training and fight scenes.

Exposure/The Grand Art is awesome. That one could be a great remake. You can get glimpses of that movie on you tube but its hard to find anywhere!

As far as I can tell it was released on VHS but never on DVD.
